Each course reflects head chef Sanggil Byeon’s reflective journey back to his roots, inspired by his time spent with venerable monk Jeong Kwan learning the art of temple food. The result is a gourmet affair imbued with thoughtful, refined flair. For starters, its signature Yukhwae Jeon never disappoints. A bed of hand-chopped beef tartare, pickled onions and egg yolk jam is served on a crisp potato scallion pancake, a savoury symphony that leaves you wanting more. The Nokcha Guksu is a delicate, thoughtful dish where green tea noodles are tossed in a house-made charred spring onion dressing, perilla oil and topped with Korean mustard kimchi and tender pork jowl suyuk. The main event, naturally, is A Feast with Hanwoo—a scrumptious platter of 1++ grade Hanwoo lower loin, Jeju Handon pork collar, tiger prawns, Korean chicken skewers and grilled vegetables. A magnanimous feast for the senses, every cut juicy and bursting forth with flavour. It wouldn’t be a true Korean meal without rice, mixed with namul and seawood and served with a warm, hearty Galbi Tang. Think tender duck meat with a crispy skin, prawns, cuttlefish, pig kidney, chicken, fish maw alongside others, doused in a delectable abalone sauce. One can also veer away from the classics by trying a baked cheesy creation, of diced seafood and sea conch plated in a piquant cream sauce—almost like a deluxe version of a delicious clam chowder. Finally, for a lighter end to the meal, the pandan pudding will certainly hit the sweet spot—one that adheres to a bouncy texture of agar agar, and finished with a topping of bird’s nest.
