As part of this broader act, AFA has been working with local experimental band The Observatory and Thai artists Duckunit to imagine a Virtual Reality and surround sound work experience that draws connections between ancient Southeast Asian cave art and the most primitive urges towards the act of the moving image.

An abalone rounds it out, steeped for six hours so every bite is filled with flavour. What follows is one of the chef’s signature dishes: a Double-boiled Sakura Chicken Soup. Here lies the essence of Cantonese cuisine—pure, refined and balanced. Laden with fish maw, dendrobium and conch, the soup is painstakingly double-boiled for six hours to preserve the purity of each ingredient while dendrobium nourishes the soul. Golden Broth Lobster is served next, where Australian lobster is served in broth made with pumpkin, salted egg and carrots. No seasoning is added–each natural flavour rises to the surface on its own, melding in harmony with one another to create a savoury, hearty dish. Embark on a multi-sensory journey that unfolds across three distinct spaces, starting with the Roku Tasting Room, which features Air CCCC’s beloved brunch and an exceptional dinner menu. Each menu is paired alongside tantalising Roku Gin cocktails and a guided tasting session. Nothing short of flavour, the dinner menu at the Roku Tasting Room is served course by course, accompanied by its own cocktail pairings. While a full vegetarian menu is available, guests can also opt otherwise, such as Snapper Ceviche and the Chicken with Sweet Potato Leaves, or the Charred Spanish Mackerel with Black Bean Sauce, for the main course. The meal begins with a Purple Potato Flatbread topped with Mushroom ‘XO’ Butter, followed by Sweet Corn from Talula, layered with a tangy white corn chutney, and Corn Husk Emping Chips, paired with a Roku Gin & Tonic with Pink Gari, which delivers a savoury kickstart to the night. The vegetarian main follows: a creamy Barley Risotto with Mushroom Confit and Grilled Asparagus, paired with The Peranakan, a slightly warm-spiced variation of a gin sour that perfectly balances the flavours. To round out the meal, a refreshing Passionfruit Granita with toddy palm, sago, and fresh mango, paired with the Coco-Groni—a local take on the classic Negroni—cleanses the palate and soothes the soul. On Sunday afternoon: For the humble Po, a revamp was due. Helmed by head chef Desmond Yong, who once led the scene at Rempapa, the Warehouse Hotel hideout is blooming into something different, one more in tune with the culinary roots of the nation’s multicultural heritage. Holding a mirror to the memory of beloved recipes you might have come across in your grandmother’s kitchen, the restaurant is sprouting exquisite homages to familiar dishes across the various ethnicities, from an organic Samsui Chicken poached and served with scallions and crispy garlic, to a fragrant Sotong Masak Hitam that is best enjoyed with a bowl of steamed rice. Other star dishes to consider for the table include an Itek Sioh, a punchy duck dish obtained through marinating it in tamarind and coriander paste overnight. There’s also the House-made Beancurd with Crabmeat, that’s equal parts hearty and flavourful, you’ll be wiping your bowl clean of it. On Sunday night: It’s been four years of Nae:um, where it has earned a Michelin star, created a series of unforgettable episodic menus and flourished under the hands of chef-owner Louis Han. For Han, it’s been four years of endless growth, to which he unveils a timely new chapter for the restaurant. Contemporary Korean cuisine still remains the bedrock whilst the space is refurbished to reflect an elevated facade inspired by the stately giwajib, a hanok fitting of Korea’s noble class. In place of episodic chapters, comes a more comprehensive ‘storybook’ menu, which showcases an evolved culinary approach by the amicable Korean chef, as he flexes his learnings and global sensibilities that are shaped by his travels. The snacks that come one by one turn out to be a winning streak: a refreshing tomato jelly immersed in chilled tomato dongchimi (mixed vegetable) broth, braised oxtail delicately sandwiched between a lavash cracker and a perilla leaf to elevate all existing flavours and one meaty yam puff concealing a heady yet smoky black bean paste pork ragu.
Nothing short of exceptional; which regular visitors of Nae:um shouldn’t be surprised but most definitely impressed by—where a higher level of finesse and more novel flavours from Korea can be uncovered. A tribute to Jeju, an abalone dish came plated in a special pine nut cream dotted with seaweed vinaigrette. There was the sweetness of the flesh paired with a nutty emulsion and smoke from grilled napa cabbage, which made a common local delicacy vastly different from any we’ve tasted. And of course, at Nae:um, the buckwheat noodles are its bread and butter—chewy noodles in a tangy dressing that includes white kimchi, crab soy sauce and sesame oil as well as a cured tobiko sauce of grated pear and gochujang. Going hand in hand with its side dish—a morel dumpling stuffed with duck meat patty—Nae:um’s proof that a hearty course will always have its place in a fine dining establishment.

Explore an exclusive autumnal bounty at Shisen Hanten
On Friday night: The Chef’s Table Autumn Menu at Shisen Hanten presents chef Chen Kentaro’s concept of Chuka Szechwan Ryori. This intimate private dining experience marries the very best of Sichuan culinary tradition and Japanese cultural sensibility. The Assorted Seasonal Appetiser, Japanese Hassun style, is phenomenal in execution, blending concept and presentation flawlessly with flavour and texture. The mains follow, replete with classic Sichuan numbing spice, from the Matsutake Xiao Long Bao to Wok-fried Oysters with Cashew Nuts and Red Peppers to the A5 Wagyu Beef Shabu-shabu. Chef Kentaro doesn’t sacrifice quality for comfort, either. The Braised Premium Hiyama Sea Cucumber and Spring Roll with Seasonal Crabmeat, Comté and Caviar are heavenly dishes that can appeal to layman and aficionado alike. Of course, it wouldn’t be a Chen Kentaro concept without his classic Mapo Tofu—rich depths of savoury flavour await, ringed with fragrant, numbing spice. To round out the meal, a refreshing Persimmon Parfait cleanses the palette and soothes the soul.

Palau’s dedication to serving market-fresh comes through with aplomb; especially with the Spanish Octopus with Iberia Chorizo Foam. Think bite-sized cuts of fork-tender octopus immersed in a heady, meaty emulsion. But before you load up on too much tapas, make sure to save room for a signature rice dish that pays tribute to Palau’s Catalan heritage. Unlike traditional paella that is cooked in a large rounded grill, his a la Llauna, sees rice baked in a shallow metal tray, to which he offers up in a squid ink or pork iteration. Those who are hungry for a perfect cut off the grill can also call for the Australian Wagyu Striploin, seared medium rare and paired immaculately with Padrón Peppers for that welcome hit of heat. To finish, you’ll be surprised to find an unlikely hero within the Chocolate Soufflé. Sans sugar, light as air, but nothing shy of decadence and intensity. Hands down, easily the best soufflé we’ve had on the island.

Flavours from the region are more pronounced than ever; led by a team that presents dishes shaped by their experiences. Think plates that are communal and personal, and not to mention, brimming with colour. Beyond returning favourites like Crispy Oyster Mushrooms, enjoy the Ceviche of Local Mahi Mahi, with wild-caught fish from the Philippines brightened with lime, guava, watermelon radish and peppery herbs from the restaurant’s very own garden. A unique rice dish came in the form of Tiger Prawns Bakar, with the seafood sustainably sourced from Vietnam and grilled with a mix of coconut cream and chili jam butter. Together with lime juice and galangal (which adds its own herbaceous kick), crispy puffed rice and fresh pomelo made this starter a delectable standout. As for the mains, an Indonesian classic, known as Bebek Bakar is reimagined. Free-range Malaysian duck that is glazed with kecap manis and topped with a spice crust, and joined by grilled sweet potato shoots, cauliflower puree, alongside a house-fermented green chili sambal from a family recipe. On the sweet front? The restaurant’s offerings will certainly not disappoint. Refreshing and ideal for sweltering days, the Watermelon Rose Gelato has our stamp of approval.

On Saturday night: It might seem like an odd choice to celebrate Singapore’s birthday at a Korean restaurant, but have a taste of Gu:um’s National Day menu and you’ll immediately understand why. Having spent the better part of the last decade in Singapore, chef Louis Han puts a Korean twist on local dishes he has come to love, giving rise to creations such as the Gochujang Soft Shell Chilli Crab—a rendition of the Singaporean favourite with fried rice cakes in place of the typical mantou, and a gochujang-based sauce that still tastes deliciously familiar. There’s also the Mandu Wings, which sees chicken wings stuffed with Korean dumpling fillings, as well as Uncle Lulu’s Fried Rice, a hearty cross between Korea’s kimchi fried rice and Singapore’s hawker-style equivalent. Witness art as resistance at the final screening of No Other Land
On Friday night: This year’s Oscar winner for best documentary feature—No Other Land—receives its final Singapore screening this Friday night at Cineleisure, and it’s one you won’t want to miss. Directed by a Palestinian-Israeli collective, the film follows Basel Adra, a young activist that documents the brutal erasure of his West Bank village under military occupation. At its centre lies an unexpected friendship with Yuval, an Israeli journalist-turned-ally, which symbolises both resistance as well as a meditation of inequality, freedom, and fractured humanity. Alongside critical acclaim, the purpose behind this screening is especially important: 55% of ticket proceeds are set to go to the Palestinian Scholarship Initiative (PSI), a ground-up fund that seeks to help displaced Palestinian students pursue tertiary education in Singapore. The film pushes the boundaries of storytelling—simultaneously adopting a goal of solidarity.

Indulge in a leisurely lunch at three-Michelin-starred Zén
On Saturday afternoon: Summer reigns in the Zén kitchen. Where the season’s finest produce come to play under the mastery of executive chef Martin Öfner and chef-founder Björn Frantzén. The experience at the 3-Michelin restaurant always starts at the first floor. In the creature comforts of homely plush armchairs, bite-sized snacks pack a powerful punch. From a tartlet plied with fresh crustacean and basil to a stuffed pillowy beignet loaded with Zén Réserve caviar, one gets a delightful prelude to the flavours—and fermentations—to await upstairs in the dining room.
Like any fine dining restaurant, the plating is impeccable, but a collective gasp will certainly come through Zén’s Crudo dish, where strips of scallop are lined with Amafii lemon and artichoke, interlacing and forming a colourful formation. It’s tart, savoury and finished with a zing of galangal oil. Every course comes with a tableside introduction, as amicable chefs plate up and explain the creation before them. There was a chawanmushi imbued with all the rich briny juices from awabi, a Japanese abalone as well as thick slabs of foie gras. An onion soup briefly stole the show—a rich concoction adequate with every mouthful of hazelnuts. Then, there was the A4 Yukimuro wagyu, perfectly seared by way of going on and off the pan continuously—as our server likened the technique to a HIIT workout. Pickled cabbage and a kampot pepper sauce sealed this dish as a real winner. Between courses, one can choose between a mixed and alcoholic pairing, to which we recommend going for the former. You get the best of both worlds, with Zén’s housemade ‘tipples’—like barley sake and mushroom date tea—often being innovative and downright delicious.
Just before heading up the third floor to the living room to enjoy freshly-baked madeleines, the main dessert stars one of Southeast Asia’s very own grilled pineapple, joined by sweet potato ice-cream and a good dose of mezcal.

On Sunday afternoon: If you’re looking for a surreal turn to your Saturday afternoon, head down to How To Dream Worlds, the second edition of Singapore Art Museum’s SAM Contemporaries series spotlighting emerging local artists. Bringing together six rising names in contemporary art—Chok Si Xuan, Chu Hao Pei, Masuri Mazlan, Neo_Artefacts, Syahrul Anuar, and PG Lee—this exhibition invites visitors to rethink their reality through sensorial storytelling.
Held at the museum’s Tanjong Pagar Distripark outpost, the works mix installations, moving image and material experimentation, transporting visitors into alternate dimensions. Delving into diverse concerns such as body-machine intimacies, dominant and erased narratives, and the nuances of cultivated space, the works urge visitors to undergo a reflective journey that questions the personal and political, as well as the imagined and uncertain. With the evolution of this exhibit spanning two years in close collaboration with SAM’s curatorial team, the show reflects a generation of artists lifting the veil on how we see, feel, and live. Dreaming, in this case, isn’t seen as escapism—but instead, as a vision of what could be.

On Saturday Afternoon: The tale goes as such: Chef Kentaro’s grandfather, Chef Chen Kenmin, was once friends with an icon of the art world, the Chinese ink painter Zhang Da Qian. Both hailing from Sichuan, they shared a mutual appreciation for the finer things in life—and Zhang was a regular frequenter to Shisen Hanten in Tokyo, Japan, because it reminded him of home. His favourite dishes, often involving the humble chicken, are honoured with Shisen Hanten by Chef Kentaro’s newest menu. Like a Fried Chicken with Hot Pepper Sauce, a delicious twist on the kung pao chicken, marinated in a feel-good sauce of fermented bean paste and chilli oil. For a chawanmushi dish, foie gras is replaced by chicken liver, bringing forth a unique texture to the flavourful crab roe soup. Simple yet scrumptious, a plate of stir-fried cabbage, celery and bamboo shoots balances out the meal exquisitely.

The Hannes Schmid: A Life In Pictures retrospective is set to bring some of his most poignant bodies of work to Singapore for the first time. This includes Blackstage—a series of portraits of the legendary musicians he lensed—and For Gods Only, which is a series chronicling the Chinese street opera performances and calligraphy arts he had been captivated by in the early 2000s, when he was living in Singapore.

The exhibition probes visitors to reflect and immerse themselves in an eclectic world of unorthodox realities.

Reap the best of spring at Jaan
On Saturday Afternoon: This season’s iteration of modern British cuisine arrives at two-Michelin-starred Jaan. Snacks come in moreish and lighter forms—from a pâté made from goose and chicken liver encased in a crispy shell to a refreshing bite of chunky broad beans within a tartlet. As with every meal service at Jaan, the soup course never fails to offer a delectable reprieve—burnt leek and the piquant essence of roasted potato sipped straight from a cup. Belly warmed up, next arrives cold plump flesh of king crab and white asparagus salad—a sweet combination that’s finished with heady crab broth.
What follows is something quite special. Westaway’s approach to the purple artichoke is presented in a custard that joins a rich confit hen’s egg yolk and the pièce de résistance—a truffled sauce made from roasted vegetables and aromatics. Paired with a crisp crab toast, which easily reminds one of a local breakfast classic, this dish did push the boundaries of food at Jaan, while hinting at an exciting turn for Westaway and his future endeavours.
Baby milk-fed lamb as the lunch’s main course took us by surprise—easily one of the lighter meat dishes which eschewed any hint of gaminess. Another outstanding feature laid in the medley of spring vegetables, almost like a salsa tossed with lemon zest, baby mint, Espelette chilli to add that bite of tang to the plate. If we had to choose a favourite dessert, it would hands down be the apple crumble. Within, the sweetest, thinnest apple slices are baked till tender, before it’s glazed with caramel and served with an oat and nut crumble, vanilla ice cream and warm English custard.

But her loyal Arianators have been holding out hope for the singer’s return to music, especially since she hinted at the possibility of a deluxe album earlier this year. Over a year after the release of Eternal Sunshine, the long-awaited deluxe album is finally arriving this weekend. With six new tracks, Grande is also gifting fans with a short film to accompany the release, which is in fact set to be her directorial debut. The short film is likely to continue the storyline of Peaches, a fictional character first introduced in the music video for “we can’t be friends (wait for your love)” and based on Clementine from The Eternal Sunshine of the Spotless Mind, the film that lent much inspiration to this project.

What did she leave behind when she walked out, and who was left to pick up the pieces? In Pangdemonium’s production, a powerhouse cast brings each character to life with such nuance and heart, it’s impossible to pick a side. What becomes increasingly clear, then, is the deep complexity of the subject at hand—making for a show that is immensely thought-provoking and still painfully relevant in the world we live in today.

Delve into the curious world of Mickey 17
On Friday Night: Robert Pattinson shines as titular character Mickey 17 (and every other Mickey before him) in Bong Joon-ho’s zany sci-fi picture—adapted from Mickey 7 by Edward Ashton. One mistake on Earth has led him to a lifetime of deaths—deaths he has ultimately signed off on as an Expendable. In a space mission led by cartoonish politician Kenneth Marshall (Mark Ruffalo) and his wife Gwen (Toni Collette), Mickey 17 is turned scapegoat for any potential experiment ahead of their eventual aim to colonise the icy planet Niflheim, where the mysterious-cum-intelligent Creepers reside. On Saturday Afternoon: Tucked away in a gated colonial-style building, Japanese restaurant Ki-Sho holds the promise of a serene meal sans the hustle and bustle of Orchard. But beyond that, it delivers exceptional seasonal produce in a Kappo-style omakase, which means having the chef before you cut and cook. This year, the restaurant welcomes resident chef Kawaii Hideki, who’s known to have mastered the refined balance of seasoning to elevate each ingredient. It’s an expertise that translates to every dish served in a seven-course lunch—from the cold appetiser of a dashi jelly-scallop-bafun uni combination to the delectable monkfish liver sushi that left us craving more. What was truly special in our books was the hotpot dish: simmered in a pork knuckle marrow broth, with a slab of rockfish and sesame tofu. Collagen-rich and savoury, the dish was robust in flavour with its key ingredients soaking up the piquant broth. Of course, an honorary mention has to go out to the final carb course—first, a small serving of Japanese rice and sakura ebi cooked in fish bone stock, saddled with the option of refilling up your bowl if you’re still hungry for more. The answer to that is always yes.
