Indulge in haute Chuka Szechwan Ryori cuisine at Shisen Hanten
One-Michelin-starred Shisen Hanten by Chen Kentaro is known for its mastery of Chuka Szechwan Ryori cuisine, a harmonious fusion of Szechwan and Japanese flavours. In Singapore, Kentaro is carving his own legacy with haute dishes that are the highest expression of Chuka cuisine. In the latter, a silky-smooth egg custard is infused with foie gras and topped with a luxurious crab roe sauce so delicious it will have you scraping the bowl. After an extensive refurbishment, the restaurant is reopening its doors to gorgeous interiors befitting its elevated cuisine. Think snacks like a Smoked Buri Tartare or a Rava Fry Madai, the latter cured with Indian spices and infused with the familiar crunch of pickled cabbage. On Friday night: A visit to Dimple should be on your agenda, given its buzzy new-kid-on-the-block status. The intimate 30-seater bar is tucked along Purvis Street and draws on the vibrancy of Hong Kong culture. Head bartender Marcus Liow takes the lead here, deftly translating Chinese principles of love, harmony, and abundance into a bespoke cocktail menu.
It’s only apt to start off the night with one of Liow’s signatures, the Mango Spicy Margarita. The drink packs a flavourful punch with a mix of Don Ramon Reposado Tequila, mango peel oleo saccharum, house-made salted caramel and, most notably, bird’s eye chilli. A scoop of refreshing mango-lime sorbet is served on the side—a thoughtful addition that counters the heat of each sip. But if not, try the Mandarin Orange Highball, a cocktail bursting with effervescent freshness, featuring Jura 12, shiso and lemon bitters and sparkling Perrier. Finally, if you’re keen on a sweet-ender, order the Hazelnut Old Fashioned, where toasted hazelnuts are blitzed and infused into Michter’s bourbon. While we fell in love with the accompanying house-made chocolate truffle, the drink itself certainly held its own. When it comes to the bar snacks at Dimple, choose from curry fish balls, or siu mai (steamed dumplings) which are generously coated in an addictive chili soy sauce.

As a result, the flavour of corn comes through more pronounced and fragrant, as compared to commercially-produced alternatives. With this MO in place as the base for most of the restaurant’s highlights, enjoy the Duck Barbacoa, slow-roasted in a hoja santa leaf, that can be spooned into a taco, as well as the Tuna Tostada, where fresh generous chunks of tuna and avocado sit atop a deep-fried tostada base. On Friday night: Fire up the grill, a smorgasbord of fun awaits you at Revolver. Now with its newly-launched à la carte menu, consider a pitstop at the beloved open-fire grill restaurant, helmed by executive chef Jitin Joshi. Where you’ll be met with an array of bold, indulgent dishes that are tethered to the South Asian palate. Whilst the kitchen’s small plates of Charred Fennel and Fresh Delhi Paneer might serve as table favourites, don’t hold out on the mango-dusted Charred Barramundi; its crisp outer dealt with just the right amount of heat to reveal mouthfuls of soft, juicy-sweet flesh for a melt-in-your-mouth experience. Also not to be missed would be its array of kulchettes, a modern rendition of the Indian kulcha, the Turkish pide and the Napoli pizza. For those up for a cheesy twist, the kulchette stuffed with creamy butter chicken and parmesan is a must have, but spice lovers should definitely take the restaurant up on its chickpeas and potato alternative as well.

Savour delectable Italian fare at Buona Terra, paired with Krug Grande Cuvée
On Sunday night: Year on year, respective Krug ambassadors create a special menu for the House of Krug, as part of its iconic Single Ingredient Programme. Centred on a chosen ingredient and the house’s philosophy of individuality within craftsmanship, chef Denis Lucchi of Buona Terra has dreamed up a five-course meal inspired by this year’s pick—the flower—as well as to complement the Krug Grande Cuvée.
There are familiar favourites like the Snail Ragu with Egg Sabayon to kick things off, but it’s through the Mozambique Scampi where the stellar meal ascends to its peak. Seared and then bincho-grilled, the fresh slab of shrimp is enshrined with a blue-pea garden, of edible flowers like Nasturtium, Mexican tarragon and Kinome leaves, before doused in a fragrant bisque made from scampi shells and infused with Mexican tarragon flower. The next course showcases one of Lucchi’s specialities—his pasta. Where the humble onion (of both red and white) brilliantly shines through; its sweet, piquant purée coating al dente homemade tagliatelle. As the course dinner progresses, headier and richer flavours come through, all of that balancing out with every sip of the bubbly on hand. For instance with its main course, that comprises quail breast roasted in brown butter, a quail leg in its jus and stuffed morel mushrooms. Even at the very end with the petit four, Lucchi’s Potato Donut carries a savoury twist—a huge dollop of Calvisius caviar to counter the silky white chocolate ganache within.

Then, followed by an Italian signature, ravioli, created from smoked Jerusalem artichokes and Japanese sweet pumpkin and topped with parmigiano fondue. To accentuate the dish, the pasta is paired with the aromatic Marlborough, which beautifully binds the flavours together with a citrus finish. As for the mains, the grilled wagyu with fermented rice stands as a clear winner; each tender slice drizzled in umami red miso sauce, leaving one craving for more. Indulge in delicious reinterpretations of classic Singaporean flavours at Labyrinth
On Saturday afternoon: Labyrinth will be a familiar name to any gourmand in Singapore. The one-Michelin-starred fine dining restaurant has been around for a decade, undergoing various iterations under the vision of chef Han Li Guang. Han, one of the true OGs of modern Singaporean cuisine, is known for his reinvention of local flavours in genuinely creative, delicious and often tongue-in-cheek ways. The latest iteration of Labyrinth’s menu is a stunning reflection of Singapore’s rich culinary heritage. Han handpicks iconic local dishes and dives deep into their history, components and flavour profile, reimagining them with premium ingredients and refined technique.
Take the Oyster Bao, which pays tribute to the Fuzhou haobing, a popular hawker snack of which Han’s favourite variety is sold at Maxwell Market. In his interpretation, Han makes a delicious filling of chopped and stir-fried lion’s mane mushroom, gu chye and diced nashi pear, elevated further with the addition of a David Herve oyster no. 4 and then by frying with aerated espuma batter in a ladle—resulting in an airy, incredibly delicate bite that explodes with flavour. Another standout plate lies in the Chicken Rice. As a Singaporean staple, this dish needs no introduction, but Han finds a way to make it novel while still maintaining the fine balance of flavour that renders it so beloved. Featuring succulent French GG poulet, the chicken breast is layered with a flavourful chicken farce and chives, then expertly poached to tender perfection. The juicy protein is paired with a smoky donabe made with a mix of old Jasmine rice and Japanese Koshihikari rice and, of course—an addictively fragrant chilli sauce, a family heirloom recipe.

On Friday night: Tucked away in a colonial building on Scotts Road, Iru Den is one of our gastronomic scene’s best kept secrets. Run by chef Javier Low, the intimate restaurant is known best to regulars who have followed Low on his culinary journey for years. Today, the menu might be designed by Low, but it certainly owes much of its charm to the chef’s wife, Emily. Hailing from Taiwan, the beauty of her culture was what inspired Low to delve deep into Taiwan’s culinary history for Iru Den’s next chapter. On the menu, you’ll find classic Taiwanese flavours reinterpreted through Low’s delicate Japanese-French lens.
Elevated presentation gives way to robust flavours, featuring premium seafood and ingredients from Taiwan—equally delicious albeit lesser known than their Japanese counterparts. An early showstopper lies in the house-made Ciabatta, pillow soft and served with Cai Pu (Taiwanese radish that is sun-dried for three days, aged with salt, then sealed in jars for 5-10 years) butter, adding a rich depth of flavour to the cloudlike bread. The radish, which stands as a star ingredient of the meal, shows up again in a warming chicken broth, making it all the more addictive. Other standout dishes include Iru Den’s signature somen, which Low transforms with a titillating dressing of white wine vinegar, shallots, diced Taiwanese octopus, wasabi, and Ci Cong, an herb commonly used in Taiwanese cuisine that adds a citrusy, slightly peppery edge. Settle in for a long, leisurely meal here—more than just delicious food, it’s a wonderful journey through Taiwan’s culinary jewels.

On Sunday night: This immersive exhibition charts the lives and careers of three visionary Peranakan women from Indonesia. Meet Nyonya Oeij Soen King, her daughter-in-law Nyonya Oeij Kok Sing, and her granddaughter Jane Hendromartono, each a batik master in their own right. Marvel at over 200 cherished objects—comprising textiles and accompanying items—and take a deep dive into the archetypes of the travelled cloth. Tactile activities are also available in the form of creative trace-and-stamp activities, activity trail booklets, and a pop-up 1970s-inspired batik shop space.

On Saturday night: Housed in the Hyundai Motor Group Innovation Center Singapore, stepping into Na Oh feels somewhat akin to entering an art gallery. It’s an unexpected sight—a serene space filled with natural light and dotted with Korean craft in the middle of a cutting-edge technological facility—but it is this precise contrast that encapsulates what the restaurant is all about. Striking the perfect balance between traditional culinary artistry and innovative modern techniques (a portion of the restaurant’s ingredients is picked fresh from the building’s smart urban farm), Na Oh spectacularly interprets familiar Korean flavours in contemporary ways.
Its new Autumn menu begins with a few signature appetisers—a simple but delightful tofu with aged soy sauce, and a buckwheat and aged kimchi pancake served with salad—before the real star of the show arrives. Tangpyeong-chae, or mung bean jelly salad, is a dish that originated from Korean royal court cuisine in the 18th century. Served on an impressive platter in a bed of ice, Na Oh’s rendition features refreshing mung bean jelly alongside lightly savoury jellyfish and crisp Swiss chard, topped off with a hot mustard sauce that provides a small but satisfying hint of spice. Choose from three delectable mains—hwe-dupbap, pork bulgogi, or seollangtang—but don’t forget to leave room for dessert. Incorporating ingredients strongly associated with autumn in Korea, the meal’s finale arrives in the form of a tartlet filled with walnuts and preserved persimmon, and a malted rice punch infused with roasted sweet potatoes. Indulge in Japanese summer delicacies with Esora’s outstanding new menu
On Sunday evening: Esora’s new menu is greater than the sum of its parts. The restaurant may have presented an exquisite line-up of modern Japanese dishes perfect for the summer, but it is head chef Takeshi Araki’s poignant inspiration that elevates the meal to a higher plane. Araki looks back to 2011, when an earthquake and tsunami hit in one of the Japan’s most devastating natural disasters in history. Then a 24-year-old university student, Araki embarked on a 100 day cycling trip around the prefectures of Japan with a friend, taking photographs for a fundraiser exhibition and stopping along the way to volunteer in various relief efforts.
Araki funnels these tender memories into his food with great finesse. A refreshingly cold chawanmushi is infused with sweet corn, layered with hand-mixed horsehair crab and uni, then topped with thinly sliced green asparagus. All the ingredients are sourced from Hokkaido, where he spent a week during his journey. Meanwhile, a quartet of delicious small bites highlight key ingredients from Chiba, Shizuoka, Gifu and Yamanashi. Hyogo, a prefecture he cycled through twice on this trip, led to the creation of a sublime somen dish. Topped with steamed awabi and junsai, the noodles are served in a umami-filled broth of pike eel consommé, finished with green yuzu zest and blanched winter melon. Complemented wonderfully by a craft tea pairing featuring an array of gentle brews and home infusions, this is a meal that will satisfy you right down to your soul.

Tour the Helen Frankenthaler: Prints 1977-2004 at STPI Creative Workshop & Gallery
On Sunday afternoon: Introducing nearly 40 works from the National Collection of Singapore and the Helen Frankenthaler Foundation, New York, this exhibition spotlights Helen Frankenthaler’s woodcuts and daring printmaking experimentation. Among her most ambitious multimedia projects, she utilised techniques such as etching, relief, aquatint and other materials such as bronze screens to create her three-panelled masterpiece named ‘Gateway’. Her works also exhibit a stunning mastery of colour as cloud-like hues serenely adorn woodcut pieces, challenging the medium while blending influences from East and West printmaking styles.

On Sunday evening: Initially serving as police barracks in Singapore’s post-war era and transformed into a thriving independent creative enclave, 195 Pearl’s Hill Terrace now faces an uncertain future with its lease expiring in March 2026. This is where Supper House’s latest exhibition is held. Featuring six Singapore-based artists, Let It Linger presents site-specific works that reflect the socio-cultural significance of the building. Delving into the ideas of time, policing and nostalgia, the exhibition invites visitors to explore not just the show, but the building as a whole, prompting them to contemplate what will be remembered about the communal space.

On Sunday afternoon: A meatless Sunday roast might seem an unusual proposition, but in boundary-pushing Australian chef Josh Niland’s hands, it’s as delicious as it is innovative. At Fysh, The Singapore Edition’s seafood-focused steakhouse, Niland reinvents the weekend tradition with a Sunday roast that places fresh catches from the ocean front and centre. Of course, you’ll find a several well-executed meat dishes on the menu, but we strongly recommend coming in a group and ordering Niland’s signature—a showstopping platter of dry-aged Mooloolaba yellowfin tuna, served three ways: lightly seared bone-in tuna carved into meaty slices; a deliciously-glazed “skirt” steak made from tuna belly; and crunchy “chorizo” sausages made with a medley of fish trimmings. While this will be the piece de resistance of the meal, don’t miss out on the appetisers. Disguised as small bites, these starter plates punch above their weight with a kaleidoscope of flavours (some, like the sambal-doused Abrolhos Island Scallop, are local-inspired) and textures to truly showcase the culinary magic that can be made with fresh seafood, inventive butchery and expert cooking.

On Sunday night: What was once known as Fat Prince has been newly dubbed The Prince, a restaurant serving Arabian cuisine with contemporary flair. By day, it’s a lively bistro. Come night, expect a moodier ambience, with the warm glow of candlelight bouncing from the sandstone walls. At its core, the menu presents a myriad of choices best suited for convivial dining—aligned with the restaurant’s ethos of shared joy and cultural richness. The obvious choice is to begin with its signature Mezze Platter.
