Together, they founded Distilleria Bottega in the province of Treviso, Italy, laying the foundations of the company now known as Bottega SpA.

Fermentation periods for the sparkling wine typically take 30 days—Bottega’s process lasts upwards of 40 days, after which the wine remains immersed in lees for 8 more months.
