Night Hawk
Small and mighty is this bar in Tanjong Pagar, having quickly established itself as a staple in the nightlife scene here. It’s a community unto itself, with regulars and newcomers alike affectionately rubbing shoulders with the accomplished bar staff behind the counter. The craftsmanship here is peerless, the recipes uncanny in how they consistently push the boundaries of gastronomy. You can reassure your date with the Kick Artist Fix—boozy breakfast in a glass—or astonish them with the Petrichor Tangible—a madman’s genius distilled in gin, mezcal and fortified wine, turned on their head with white chocolate and pickled beetroot. Pop City
The Jigger & Pony Group’s latest venture is finally making good on the Japanese hype train. A veritable kissaten in the heart of the CBD, their newest spot serves up an easy way to wow your date this V-Day with the culture and mythology of Japan. City pop records adorn the walls, the sounds of the ‘80s lovingly cooing from speakers, and the diverse furniture arrangements provide dreamy backdrops for conversation. There’s even a private listening room available for reservations. However, the real star here is the menu’s 16 signature drinks, which are divided in two, between music—the ‘Pop’—and fashion—the ‘City’. Take, for example, the Yuzu Whisky Sour, which is directly inspired by the legendary J-Pop artist, Hikaru Utada; or the Rugged Roy, which is a loving nod to one of the most famous Japanese denim brands, Momotaro Jeans.

This bar is lightning in a bottle—if the lightning is homely comfort and the bottle is a basement under a shophouse on Ann Siang Hill. Parliament
True-blue Americana is hard to find in Singapore. We’d wager Parliament might be the only place in the country where the spirit of the dive bar is faithfully captured. Festooning the walls and ceilings are the likes of pennants sporting the branding of beer pong staple Pabst Blue Ribbon, as well as grunge-era band posters and United States license plates. Perhaps surprisingly, nothing feels forced—it really does feel like southside Chicago in Singapore. If you were worried about the reputation of dive bars sporting middling drinks, fear not: both the food and cocktails here are excellent (and blessedly, relatively affordable). You can dazzle your date without breaking the bank here—always a good thing, in our books.
