For Mother’s Day, the bold, beating heart of the Burmese jungle comes alive at Club Rangoon. The restaurant, as per usual, knows how to pare food to its most elemental components—simple, yet deeply satisfying. Kick things off with either the Fried Oyster, cooked to perfection while retaining all of its zesty brine, or the Bel Thar Thoke, shredded duck confit accompanied by a fresh winged bean salad. The mains, prefaced by the Wet Thar Nangyi Thoke, a Burmese noodle staple, are equally hearty and hale: Kyet Kin is a funky, filling combination of grilled chicken thigh and an aloo Waldorf salad, whereas the Burnt Cabbage brings a welcome dose of flavour to the fibre game, enlivened by a moreish pairing of curry butter and mint yogurt. Not to be missed is its dessert offering—Shwe Yin Aye, a playful, refreshing marriage of coconut ice cream and jackfruit.

The menu here is an exercise in elegant reanimation, bringing to life all the charm of a rustic family kitchen, replete with bold flavours all dialled to eleven. The Smoked Pork Knuckle Dhalcha is a Eurasian twist on the lentil stew, combining smoked knuckle and ham with a fragrant spice bed of garlic, ginger and onion. A worthy competitor to this dish is its Chicken Vindaloo, inspired by the Portuguese vinha d’alhos—lathered in a savoury curry paste and herb blend, and finished with an inspired, acidic coup de grâce of vinegar and calamansi. For those interested in lighter fare, the Green Mango Sambal shows that healthy food doesn’t need to compromise on taste—familiar sapid notes of turmeric, ginger, garlic, chillies and shallots are married with tangy slices of green mango and tart splashes of vinegar.
