Through a process pioneered in 1983 by the legendary Malt Master David C. Stewart, The Balvenie Cask Finish whiskies are matured in distinct cask types to develop unique characters, on top of their signature honey and vanilla notes. The Cask Finish core range includes Doublewood 12, Caribbean Cask 14, French Oak 16 and Portwood 21, each with their own special qualities.
The Balvenie 16-Year-Old French Oak, for instance, is a vibrant single malt finished in American oak casks that previously held Pineau wine from the French Charentes vineyards. The casks help develop the whisky’s vanilla spice and warm honey notes. On the nose, you’ll find light floral hints of lotus and geranium, mingled with fresh meadow grass and peeled apple skin. The taste bursts with tangy lemon rind and grapefruit, balanced by the sweetness of glazed fruits and a hint of root ginger. The finish? Crisp and refreshing.

Then there’s the 21-Year-Old Portwood Cask Finish, a whisky matured to perfection in portwood casks. This indulgently smooth and refined whisky reveals fruity and ripe raisin notes on the nose, complemented by a subtle nutty dryness. Farmers: The stewards of the land
The journey begins with the farmers. James and Duncan Wiseman are the stewards of the land, growing the barley that is integral to The Balvenie. With the Scottish highland’s unpredictable weather, their generational instincts on when to sow and harvest ensure that only the finest ingredients are used in the Balvenie whiskies. It’s their hard work and dedication that lay the foundation for quality.
Coppersmiths: The keepers of the flame
The tradition of coppersmithing is kept alive by Dennis McBain, who has been with The Balvenie since 1966. As McBain reaches retirement, his apprentice George Singer—who has 22 years of experience, no less—will follow in his footsteps, maintaining valves, pipework and shaping copper sheets for stills. The coppersmith’s role in maintaining the copper stills is essential to the distillation process, ensuring the consistency and purity of the spirit.

Coopers: The guardians of the cask
The coopers of The Balvenie are the unsung heroes who breathe new life into the casks. Head cooper Ian McDonald has 54 years of experience bringing harmony between wood and spirit. He and his team meticulously repair and rebuild the casks that infuse character into whisky, providing the perfect environment for it to mature.
Malt Men: The soul of the distillery
Four times a day, seven days a week. The malt men turn the barley by hand on the very same traditional malting floor since 1929, a labour-intensive process that imparts the distinctive flavours and aromas found in each bottle. They are the custodians of tradition, overseeing the malting process that gives The Balvenie its unique character.
Malt Master: The alchemist of flavour
Finally, there’s Malt Master Kelsey McKechnie. She oversees the creation of all whiskies for The Balvenie, using her finely tuned nose to maintain the consistency of each batch. Kelsey graduated under the tutelage of the aforementioned David Stewart, who devoted six decades of his life to the art of whisky-making. Inspired by his legacy, Kelsey will continue to use and build upon his techniques while putting her own stamp on future whisky innovation—upholding the craft of The Balvenie for generations to come.
